Crustless Quiche

Well I must be getting older as my memory failed me. I went the No Frills to pick up everything to make Quiche, but when I got to the store I realized I had left my list on my kitchen counter. No big deal, I’ve make this dozens of times. So shopping I went, picking up Bacon, Smoked Salmon, Spinach, Onions, Broccoli, Cheese, and Eggs. So looking forward to eating it, I headed home to start making it. I un-packed everything and started frying up the a package of bacon. As the meat is cooking I began prepping my eggs 12 of them whisked in a large mixing bowl, then I add about 1 cup of grated old cheddar cheese, 1/2 of a large onion grated, one small crown of broccoli, chopped. 1/4 cup chopped spinach.  1/2 teaspoon of salt. I then cut up the smoked salmon. Everything is now ready, to be poured into two pie shells, one I will add the bacon, to the other smoked salmon. Oh wait, where are my pie shells. I forgot them. Lovely!

I really don’t want to get into the car and go back. So I looked through my cupboards to see what I could use, I have two square cake pans but the more I thought of it the less I wanted to use them as I believe the bottom and sides would be way over cooked for my liking. So I though I’ll try the 2 quart Dutch oven. So I literally poured everything into it and added the bacon and smoked salmon gave it a stir and grated a nice layer of cheese on top and into the oven it went. I baked it uncovered at 325 for about an hour, I then stabbed it with a knife to see if it was cooked thoroughly, ( if the knife comes out clean it’s done. My wasn’t so I gave it another 20 minutes and here it is. It is awesome and about 4 inches high. Enjoy!
